Menu Plan Monday

I’m feeling quite ambitious this week…trying all new recipes except for the hot dogs and beans on bowling night.

Monday: Bourbon Chicken with white rice and steamed veggies (I plan on altering the recipe as recommended by several of the reviewers to include less bourbon and a little more brown sugar).

Tuesday: (Bowling League) Hot dogs and beans

Wednesday: Southwest Black Bean Salad with cornbread (Veggie meal)

Thursday: Spinach Artichoke Calzones

Last week we did pretty well at sticking to the menu. Monday night my parents invited us out to dinner, so we ate at Lonestar rather than making pot roast. Tues night I got out of work later than expected so I didn’t make it home in time to make spaghetti, so I had a hot dog at the bowling alley and Hubs was on his own (I also took my snacks bowling, so in addition to the hot dog, I also had a banana, strawberries, 1/2 green pepper, and apple sauce). Wed night we had hot dogs and beans (again) as planned and Thursday night we made veggie Fajitas that were awesome! I cooked up green, red, and yellow peppers, onions and mushrooms. Then I heated up some black beans. We put those in tortillas with a minimal amount of sour cream and shredded cheese and YUMMIE!

During the week, Hubs often commented that he wasn’t looking forward to the “vomit fajitas” I had on the menu for Thursday, but turns out, he really like them! They are a keeper fo-sho.

Last week I did exceptionally well eating my fruits and veggies. Each day I packed up some combination of: green pepper, bananas, apple sauce, tomato juice, strawberries, juicy juice fruit drink (100% juice), carrot sticks, grape tomatoes, and grapes. I would also include a 100-calorie snack pack.

This is in addition to the fruit I add to my breakfast cereal (plain cheerios or granola) and the fruit salad I made for lunch a few times during the week.

I know I still need more veggies, but it’s a great start!

P.S. My motivation for the fruit/veggies is the book Quit Digging Your Grave with a Knife and Fork. In the book, Huckabee talks about how he brings a soft cooler filled with good eats wherever he goes as a way to ensure he gets what he needs throughout the day. The dude lost 110 lbs and has kept it off for nearly 4 years.

P.P.S. FlyLady’s June New Habit is Staying hydrated. I’m usually pretty good at getting my H20 throughout the day, but I am making more of an effort to get my full 8 glasses now. Also, I’m a HUGE fan of the 5 calorie Crystal Light lemonade mix (I drink that in addition to my H20, not as a substitute).
