Fill one small corn tortilla with 1/4 cup mashed black beans. Top with 1/4 avocado (diced) and add 2 Tbsp salsa.

Ingredients:
1/2 C Corn muffin mix (I use 1/2 a Jiffy muffin mix box)
1/2 C grated Parmesan Cheese
1/4 tsp salt
pepper to taste
4 eggs
3/4 C half and half cream
1 Tbsp Canola Oil
6 spears of cooked 1/2″ cut up asparagus or veggie of choice
Directions: Preheat oven to 375 degrees. In small bowl, mix cheese, salt and pepper, and Muffin mix. Beat eggs and stir in. Add cream and oil. Fold in veggies (you can add ham or bacon here too).
Cook for 30 minutes. Let cool for 5 minutes before serving.

You need:
1 15 1/4 oz. can whole kernel corn, drained
1 14 3/4 oz. can creamed corn
1 pkg. jiffy cornbread mix
1 stick butter, melted
1 c. sour cream
Directions: Mix everything together in a bowl. Pour into a greased casserole dish. Bake at 350 degrees for 45 to 60 min. ~ until golden brown.
